The 2021 Chablis Mont de Milieu 1er Cru is the largest cuvée from Pinson thanks to their 4.5-hectares of vines planted between 18 and 40 years ago. Fermented in 10% new oak and then aged in barrel, it has an expressive bouquet, outlined with lemon peel, clementine and light pear aromas. Aromatically explosive and wonderfully deep, the 2017 is so expressive and so inviting today. Time in the glass just brings out the wine's depth and layers. Pale, green-tinged yellow. Reticent aromas of mirabelle and iodine. Then tight but sappy in the mouth, with lovely inner-mouth perfume and lift to the lemon, wet stone and mineral flavors. This tactile, classic wine demonstrates the terroir more than it does the vintage. Raveneau's 2016 Chablis 1er Cru Butteaux is excellent, offering up a youthfully reserved bouquet of apple, white peach, beeswax and dried flowers. On the palate, it's medium to full-bodied, with lovely texture, considerable mid-palate amplitude and a bright line of acidity, concluding with a firm, salty finish that balances its somewhat gourmand attack. Along with the Vaillons, the Butteaux stood out as one of the most complete of Raveneau's premiers crus this year, revealing more and more nuance over several days.
