Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Domaine de Chevalier was tasted from two bottles. I returned the first as it felt a little volatile on the nose, but the second was as it should be. This has a very refined bouquet with scents of warm gravel and black olives permeating the dark berry fruit, all very well defined and focused. The palate is medium-bodied with fine tannin, very fresh and generous in the mouth with superb mineralité and tension towards the tertiary finish. Opaque purple. Captivating aromas of boysenberry, dark cherry, pepper, spices, cocoa powder and smoky minerality. Then intense and penetrating in the mouth, with brilliantly fresh dark berry and kirsch flavors lifted by notes of cinnamon and star anise. Finishes pungent and impressively long, with a palate-saturating whiplash of dark berry and spice flavors. This wine calls for at least decade of aging. Already so multi-faceted and open on the nose. Very tangy and finely spiced on the palate too. There’s density and elegant tannic structure but so well dressed in light but fine fruit that you barely see the framework. Fine spicy grip on the long fresh finish. Silky, scented, gorgeous. I'm drawn to austerity in this vintage, he told me, adding that he plans to lay down magnums of this wine in his personal cellar, along with the Clos de la Roche and Echezeaux. Perhaps best today on the extremely long, palate-staining finish, which features an almost electric impression of precision and complex suggestions of minerals, coffee and spices. Finishes juicy and long, if a bit youthfully brutal today. (A second sample was more pliant in the middle palate, and broader and sweeter on the back end.) Deep red with ruby highlights. Knockout nose combines raspberry, peony, spices, blood orange and a whiff of pepper. Wonderfully sweet and silky in the mouth and yet with a steely impression of spine. Boasts lovely clarity and penetration and finishes with superb sappy persistence. This was finished with its malo but had not yet been racked. The 2007 Chambolle-Musigny Les Cras 1er Cru has a slightly deeper hue compared to the 2000. Red berry fruit is laced with morels, pressed rose petals, leather and incense, quite complex and involving. The palate is medium-bodied with commendable depth considering the season. Pure red fruit with wonderful piquancy, hints of white pepper and clove lead towards quite a weighty and compelling finish.
