Hand-harvested bunches are destemmed, cold-soaked for 12–24 hours, the must is settled for 24 h, then inoculated with Saccharomyces cerevisiae and Torulaspora yeasts. Fermentation at low temperature. Aged on its lees for 6–8 months. How much pleasure! A wine with a lot of aroma, with endless layers of aromatic complexity. It has a great mouth-coating texture triggering a herbal memory. The palate is full, rich, pleasant, although with sharp acidity above the rich texture. It is very well delineated, fresh, rich, deep and concentrated. My favorite in the lineup was the 2016 Cabernet Franc Mt. Veeder. This rock star effort has a Cheval Blanc-like level of complexity and purity. Silky and radiant, with plenty of bright, red-toned fruit, the 2017 Napanook is one of the very finest Napa Valley Cabernets readers will find in this price range. Savory, earthy and licorice undertones add striking shades of nuance, with silky tannins that extend the finish effortlessly. This is such a gorgeous and inviting wine. I've tasted very few wines that feel as complete as the 2022 Occidental Cuvée Elizabeth. Like the 2021 vintage, it’s the most floral and ethereal in the lineup, but this new release reaches new heights. It comes from the estate Bodega Headlands vineyard, where the vines already tend to give tiny berries and low yields. With 2022 being such a warm vintage, the crop was even smaller than usual, making the flavours and aromas way more vivid. With a highly expressive nose, you get a beautiful bouquet of violets and wet lavender mixed with the scent of cool, damp soil. A dusting of baking spice and a clean, salty breeze root this wine unmistakably in the West Sonoma Coast. On the palate, cranberries, pomegranate juice, and wild berries blend into a juicy and lively core. Satin-fine tannins bring just enough structure without getting in the way of the wine’s elegant frame. Bright acidity lifts everything into a long, satisfying finish. It’s a wow-moment wine. A fist of late summer cherries, raspberry and bilberry fruits set out their stall, all with the juicy character that confirms, even in a hot vintage like 2017, Opus can deliver balance and sculpted elegance. Beautiful grip, creamy texture with a strikingly powerful tannic frame. As the wine stays in the glass the floral aromatics begin to bloom up. A brilliant Opus. 20 days maceration - around half what it would have been a decade ago. 54% native yeast, as part of their native yeast project. 5% Merlot and 1% Malbec complete the blend. Harvest spread out over 5th September to 8th October, just before the fires, by which time they had less than 10% of the fruit still out on the vines. 3.7pH. The first time specific blocks have been used for this wine. Dark forest berry notes on the nose with perfumed elements and notes of milk chocolate. Supple and agile, generous with textured, slightly grainy tannins that are so pleasant - expansive and round in the mouth. It's well built and very approachable with blackcurrant and black cherry flavours on the palate. Concentrated, deep and layered but still with elegance. Extremely characterful. The 2018 Cave des Lions is a barrel sample of about 60% Cabernet Sauvignon and 40% Cabernet Franc, aging in 100% new French oak. It comes from fruit that grows in front of the Daou family home. Opaque purple-black in color, it has the most singular nose loaded with kaleidoscopic aromas: cigar ash, English breakfast tea, rooibos, hibiscus, iron, crushed stone, blackcurrant jam, blackberry pie, vanilla bean, Morello cherries, chocolate box and cigar box. I’ve never smelled anything like this—it's like staring into a well of archetypal Cabernet Sauvignon. Medium to full-bodied, the satiny palate spreads its glorious flavor wings, with unbelievable melting tannins and seamless freshness, finishing very long and very layered.
