Full golden-yellow colour; very toasty old-wine bouquet which gradually opened up and revealed more with time in the glass. Aromas of toasted bread, toffee, vanilla, apricot, blood orange, quince paste; the palate full, rich and very dry, the penetrating acidity powering a very long finish. A very mature Champagne, not for everyone, but for those who enjoy aged Champagne, it's a joy. The rating is purely about pleasure. Fresh, pure and invigorating aromas in which green apple and citrus slowly give way to subtle, soft brioche, ivy leaf and plant sap; just a brush stroke of cream behind. This is a lean, pure Champagne of perfectly poised ripeness and restraint, very long in flavour, with the creamy richness of autolysis perfectly judged -- supportive but in no way obtrusive. The minority Chardonnay still takes a leading role at this stage; the majority Pinot Noir provides a pure frame and canvas. It's a pale, glowing lemon yellow, with a fine mousse and ample wealth of billowing vanilla, cream and plump hazels. The palate has dramatic intensity and drive, delivering a wealth of chalky lemon; its athleticism and vigour almost come as a surprise after that floating veil of seductive scent. Great elegance and finesse already on the perfectly brilliant and aromatic nose shows Pol Roger's 2008 Blanc de Blancs Brut, displaying white and stewed apples with fine citrus flavors and discreet chalky aromas. The palate is dense and citric, as if limes and lemons are squeezed on a chalky rock. The purity, power and intensity is as remarkable, as is the finesse and persistence of the bubbles, the mousse on the palate and the long, persistent finish. Dosed with seven grams per liter, this extraordinary Blanc de Blanc Brut tastes drier than the Réserve Brut, but reveals a perfect ripeness of yellow fruits. The finish is lovely aromatic and intense, but also clear, fresh, firm and absolutely stimulating. A bright yellow hue, its aromatics are exquisite and well-balanced, with fresh notes of key lime, candied apple, fresh croissant dough, fresh pineapple, and honeysuckle. Medium to full-bodied, it fills the palate with a rounded and supple texture and a pillowy mousse. It’s long on the palate and has a silky personality as well as a long, pristine finish. A striking, tightly-coiled wine, the 2007 Dom Ruinart will leave readers week at the knees. In this vintage, Panaïotis took Dom Ruinart, which has traditionally relied on a relatively high percentage of Chardonnay from the Montagne de Reims and tilted the balance to 75% Côtes des Blancs and 25% Montagne de Reims fruit. As a result, the 2007 is much more chiseled and steely than is the norm. The citrus, slate, crushed rock, white pepper, mint and floral notes really sizzle in this powerful, dramatically rich Champagne, with bright saline notes that add freshness and vivacity to the striking finish. The 2007 is a stunning Champagne by any measure. Although it is very early, the 2007 has the potential to go down as one of the great Dom Ruinarts. It is every bit that special.
