Fermented in stainless steel with indigenous yeast without added SO2 (which is added only at bottling). Total of 20 days on the skins. Part of the wine was aged on the fine lees in stainless steel and part in concrete. ‘We macerate for a shorter time in warm years, but longer in cooler years to get softer tannins.
