Chateau Climens always tends to go into its shell after bottling, which is probably why I was not dishing out an even higher score to this still, spellbinding Barsac. The 2007 is endowed with a lovely bouquet: very pure with honey, a touch of orange-blossom and a touch of quince. The palate is very well-balanced with great purity and a dash of spice as well as a lovely viscous, botrytis-laden finish that possesses awesome weight and persistency. This is a slice of heaven in a glass, but it definitely needs time to reveal its true potential. Tasted January 2011.

Tasted at BI Wine & Spirits' 10-Years-On tasting, the 2007 Domaine de Chevalier was tasted from two bottles. I returned the first as it felt a little volatile on the nose, but the second was as it should be. This has a very refined bouquet with scents of warm gravel and black olives permeating the dark berry fruit, all very well defined and focused. The palate is medium-bodied with fine tannin, very fresh and generous in the mouth with superb mineralité and tension towards the tertiary finish. What a lovely Domaine de Chevalier—à point—but with the substance to suggest that it will not go downhill in any hurry. Tasted February 2017.

Sweet and juicy, with an attractive layered texture and very good definition to the flavors of cherry, mocha and leather. Cooling acids contribute to the impression of shape and structure. Finishes juicy and long, if a bit youthfully brutal today. (A second sample was more pliant in the middle palate, and broader and sweeter on the back end.) This high-altitude, limestone-rich site, always picked late, is exactly the type of property that was able to take advantage of the favorable September and October weather in 2007.
